Ingredients
Salad
- Tomato
- Cucumber
- Butternut squash
- Capsicum
- Avocado
- Lime juice
Chutney
- Fresh coconut
- Sesame seeds
- Butternut squash
- Lime juice
- Chilli powder
- Cumin seeds
- Ajwain seeds
- Cinnamon
- Clove
- Amchoor (mango powder)
- Fenugreek seeds
- Linseed oil
Stuffed Pepper
- Peppers
- Chutney
Method
Salad
- Grate the cucumber into a bowl
- Add cubed tomato, butternut squash, capsicum and avocado to the bowl
- Cover the mixture with lime juice and mix thoroughly
Chutney
- Grind sesame seeds, cumin seeds, ajwain seeds, cinnamon, clove & a few fenugreek seeds. Add these to the blender
- Blend the ground spices with fresh coconut, butternut squash, lime juice, chilli powder, amchoor powder and 1-2 teaspoons per person of linseed oil (Omega3 rich). Put this mixture into a mixing bowl.
- Then add some home grown finely chopped purple beans to the mixing bowl and sprinkle more sesame seeds and mix well
Stuffed pepper
- Slice each pepper into 2 equal halves and remove the seeds
- Fill each pepper half with the chutney and garnish with a slice of cucumber on top
