Ingredients
Stuffing
- Orange Seasonal squash or Butternut Squash
- Courgette
- Raw Mango
- Small Red Sweet Pepper
- Ground Spices: Cumin seeds, Corriander seeds, Cinnamon, Cloves, Rock Salt and Chilli powder
- Peanuts
Container
- Large Green Capsicums
Method
Stuffing
- Grate the squash, courgette, raw mango and small red pepper into a mixing bowl
- Add the ground spices to the mixing bowl and mix thoroughly
- Crush the peanuts and add to the mixing bowl and mix thoroughly until the mixture begins to become little stick. Add more crushed peanuts as necessary to ensure stickiness
Container
- Slice the large capsicums into half and stuff with stuffing before serving
